HUNGRY? Here's what we've been cooking!
Seriously, I’m not even going to count the weeks of social distancing any more. DONE. It’s hard, it’s busy, we’re making the best of it, AND we’re trying not to gain 20 pounds from all the baking we’re doing! I get it. And we’ve definitely splurge-eaten over the past several weeks…
A decadent cream of mushroom soup.
Homemade pizzas on the grill with the hands-down, BEST dough ever! Thanks to the New York Times Cooking page for sharing the famous Roberta’s pizza dough: (Roberta's Pizza Dough). Like me, you’ll probably ask yourself if it’s necessary to buy the Italian 00 flour — YES, it is! Just pop over to Amazon, and you’ll have it for next weekend.
Indian food made an appearance for a virtual dinner party last week, and Bliss whipped up a delicious banana bread with butterscotch chips stirred in, and the soup just begged for a loaf of Mark Bittman’s No-Knead Bread, one of the most popular New York Times recipes of ALL TIME (No-Knead Bread). This loaf wasn’t the prettiest (not sure WHAT happened), but it tasted great with a generous spread of salty butter.
Back to the REAL world, the every day… We are fortunate to be healthy and happy, and this time is serving as a sort of RESET in some ways, a time to reevaluate what’s really important in life. I recognize now, more than ever, the importance of nurturing our bodies with nourishing, healthy, whole foods. So, while we are certainly indulging a bit, we spend the weekdays being pretty conscious of what we are consuming. Our family discovered Green Chef when I was in grad school. It was an easy way to ensure a quick, healthy dinner could be on the table at the end of a long day. They offer a range of menus: Paleo, Keto, Plant-Powered, Balanced Living and a Family Plan. We stick with the Paleo plan, and the recipes are delicious. No grocery shopping necessary — it’s a social-distancing WIN!

Speaking of quick and easy, if you aren’t already using these brilliant little tubes of garlic paste and tomato paste (leave it to those Italians), why NOT??? A squeeze here, a squeeze there — no garlicky smell on your hands and no more wasted half-cans of tomato paste.
I’ve also started brewing kombucha again — after giving my SCOBYs a LONG vacation. I’m trying the continuous brew method in addition to the batch brew this time. If you’re a brewer, I would love to hear what your favorite flavors are — now seems like a good time to get creative!
If you’re not familiar with holistic nutritionist Megan Ulrich’s new cookbook —glo: recipes for inner radiance — you should buy it! Megan practices in Bozeman, and the cookbook is soooo good. It’s taken our smoothie game to a whole new level!
Here’s Blissy’s favorite (non-smoothie) breakfast, a riff on a version we loved at the Commons Club restaurant at Virgin Hotels San Francisco. Rosemary bread, toasted, with avocado, pickled onions, a mild chevre and thin orange slices (or, in this case, cuties). YUM! Healthy eating looks so pretty, right?
I write this from our little house in Big Horn — a short distance outside Sheridan, Wyoming. As I mentioned in my Instagram post yesterday, this Spring Break is dramatically different that those in years past. We are pining for Anguilla — AXA has our hearts! — but we decided a change of scenery would do us good. Spending some time in the sun (Brad’s heading to the golf course) before a wintry cold snap rears its ugly head this weekend is just what we needed. And playing board games in a different living room is a welcome change — but I’m still winning the word games!
Keep on nourishing your bodies and souls with healthy, tasty, whole foods and lots of sunshine. Take care of each other.
From Big Horn with LOVE!
